Veiko took responsibility for the building and its technical side, giving new life to the old computing centre, though in a completely different form.
Inspired by the World
Every year we travel to different countries to gather inspiration. The food cultures of Greece, Italy, Spain, India, Japan, Mexico, Africa, Thailand, France, and many more have all left their mark on our kitchen and our events.
From these experiences, our dinner series “Travel Without Travelling!” was born — a flavour journey where guests can experience the world’s cuisines and stories without ever leaving Haapsalu.
It is experiential hospitality at its finest, taking you on a journey through food, people, and moments.

Our boutique hotel in Haapsalu operates on the principle that comfort and care can go hand in hand. We use energy-efficient solutions and prioritise local, natural resources to reduce our footprint and offer guests a truly eco-friendly hotel experience in Haapsalu.
On our hotel roof, solar panels generate the energy we use for heating. In our car park, guests will find an electric vehicle charger, and to conserve water we have implemented thoughtful, sustainable solutions — we also encourage our guests to use water responsibly.
Our garden is designed so that bees have blossoms to forage from throughout the summer — a small way of nurturing both life and beauty.

Co-operation with Local Producers
We work daily with farmers and small producers from Lääne County and Saaremaa, sourcing fresh, high-quality ingredients for our kitchen. Local origin is an essential value for us, as it ensures consistent quality and an honest, authentic taste. We are always happy to share information with our guests about the local producers featured in our menu. This gives a clear understanding of the ingredients we use, where they come from, and what we create from them. At Old Hapsal Hotel, our choice of ingredients is intentional and built on partnerships with people who work with reliability and heart. This allows us to offer a menu that is high-quality, consistent, and deeply connected to our region.
Less Waste
Old Hapsal Hotel is a Green Key–certified accommodation and event venue, where sustainability is a natural part of everyday work — from energy use to responsible catering and waste reduction. We design our menus so that flavours are balanced and portions thoughtfully planned, reducing food waste and ensuring that guests can take exactly as much as they truly wish to enjoy. We monitor food waste systematically: we weigh our bio-waste, compare results with previous periods, and adjust our menus and service methods whenever needed. Our goal is simple — to ensure that as little food as possible ends up in the bin and that every event is organised in an environmentally responsible way.
Intentional Breakfast
At Old Hapsal Hotel, breakfast is an essential part of our hospitality. We serve it buffet-style, but on smaller platters, allowing guests to sample a variety of dishes and take exactly as much as they wish. Throughout the morning, we replenish the platters continuously to ensure everything stays fresh until the very end. Our hostess Daire is often present at breakfast, sharing insights about the dishes and the small producers who supply our eggs, fish, juices, and other delicacies. This gives guests a clear understanding of the origin of each ingredient. Breakfast is a key part of our “bed and breakfast in Haapsalu” experience — something guests have repeatedly called one of the best in town. Our aim is to offer a fresh, varied, and high-quality breakfast that gives the day a truly pleasant start.
